Crispy Scotchies Recipe

Ingredients
  • 1 c sugar
  • 1 c butterscotch chips
  • 1/2 c packed brown sugar
  • 1 c packed brown sugar
  • 1/2 c sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 1/2 c all-purpose flour
  • 4 c crisp rice cereal, divided
  • 6 tbsps butter or margarine, softened
  • TOPPING:
  • 1/2 tsp baking powder
  • 1 tsp baking soda
  • 6 tbsps butter flavored shortening

Directions
  • Step #1 In a mixing bowl, cream butter, shortening & sugars.
  • Step #2 Add eggs, one at a time, beating well after each addition.
  • Step #3 Beat in vanilla.
  • Step #4 Crush 2 c of cereal; add flour, baking soda & baking powder.
  • Step #5 Gradually add to the creamed mixture.
  • Step #6 Stir in butterscotch chips & remaining cereal.
  • Step #7 Combine topping ingredients in a small bowl.
  • Step #8 Roll dough into 1-1/4-in.
  • Step #9 balls, then roll in topping.
  • Step #10 Place 2 in.
  • Step #11 apart on ungreased baking sheets; flatten slightly with glass.
  • Step #12 Bake at 350 degrees F for 10-12 mins or until golden brown.
  • Step #13 Cool for 1 min before removing to wire racks.
