Fiesta Rotini Recipe

Ingredients
  • 1 large zucchini, sliced .
  • grated parmesan cheese, as desired .
  • 1 medium onion, sliced .
  • 2 tbsps chili powder .
  • 3 tbsps olive oil .
  • 1/3 c pepperoncini peppers, sliced .
  • 1/2 c pitted black olives, sliced .
  • 16 oz whole wheat rotini .
  • 4 garlic cloves, minced .
  • 1 (14 1/2 oz) can sliced tomatoes & green chilies, undrained

Directions
  • Step #1 Cook the rotini according to package directions.
  • Step #2 Meanwhile, In a large-ish skillet, heat oil over med-heat/flame.
  • Step #3 Saute the garlic & onions.
  • Step #4 Add zucchini & peppers, cook 5 mins or until vegetables are tender, stirring every once in awhile.
  • Step #5 Add the chili powder, tomatoes with sliced green chiles & olives, & bring to a boil.
  • Step #6 Reduce heat to low.
  • Step #7 Simmer uncovered 10 mins, stirring frequently, until mixture thickens.
  • Step #8 Add rotini to vegetables.
  • Step #9 Mix well.
  • Step #10 Sprinkle top with parmesan cheese, if desired.
  • Step #11 Serve as soon as possible.
