Russian Easter Cheese Paska Recipe

Ingredients
  • optional .
  • 4 lbs friendship farmer cheese .
  • 16 oz sour cream .
  • 1 1/2 c sugar .
  • 6 eggs, beaten .
  • ground almonds (optional) or lemon zest (optional) .
  • 1/2 lb butter .
  • 2 tsps vanilla

Directions
  • Step #1 Melt butter.
  • Step #2 add sour cream & eggs.
  • Step #3 Stir constantly over a low heat until it looks like loosley scrambled eggs.
  • Step #4 Remove & cool.
  • Step #5 In a large size mixing bowl, mix egg mixture with sugar, vanilla & farmer's cheese.
  • Step #6 Beat well on a lowish speed.
  • Step #7 Drape a cheese cloth over a large cheese mold or clay flower pot with hole on the bottom.
  • Step #8 Put weights on top to squeeze out excess water.
  • Step #9 Refrigerate 24 hrs.
  • Step #10 Unmold.
