Chicken With Tomatillos And Poblanos Recipe

Ingredients
  • 1 pinch black pepper
  • 3 Anaheim chile peppers
  • 2/3 c fresh cilantro, sliced
  • 1 pinch cayenne pepper
  • 2/3 c red bell pepper, sliced
  • 1 tbsp dried oregano
  • 4 skinless, boneless chicken breast halves - cut into 2 inch pieces
  • 3 fresh poblano chile peppers
  • 1 onion, sliced
  • 6 cloves garlic, minced
  • 3 tbsps vegetable oil
  • 1 c chicken broth
  • 1/2 tsp salt
  • 4 green onions, sliced
  • 1/4 c all-purpose flour
  • 3/4 lb tomatillos, sliced

Directions
  • Step #1 Preheat oven to 450 degrees F (230 degrees C).
  • Step #2 Roast peppers for about 25 mins, until the skins can easily be removed.
  • Step #3 Remove skins, & chop peppers.
  • Step #4 In a medium saucepan, green onion, onion, mix sliced peppers with tomatillos, red pepper, & garlic.
  • Step #5 Stir in chicken broth.
  • Step #6 Heat to a boil, reduce heat, & let simmer 15 mins.
  • Step #7 Heat oil in a large skillet over med-heat/flame.
  • Step #8 Dredge chicken in flour, then saute briefly.
  • Step #9 Pour tomatillo mixture over chicken.
  • Step #10 Spice up with oregano, salt, black pepper, & cayenne pepper.
  • Step #11 Simmer for 25 mins, or until chicken is no longer pink.
  • Step #12 Stir in the cilantro just before serving.
