Guacamole With Tomatillos
Ingredients
1 pinch black pepper
3 Anaheim chile peppers
2/3 c fresh cilantro, sliced
1 pinch cayenne pepper
2/3 c red bell pepper, sliced
1 tbsp dried oregano
4 skinless, boneless chicken breast halves - cut into 2 inch pieces
3 fresh poblano chile peppers
1 onion, sliced
6 cloves garlic, minced
3 tbsps vegetable oil
1 c chicken broth
1/2 tsp salt
4 green onions, sliced
1/4 c all-purpose flour
3/4 lb tomatillos, sliced
Directions
Step #1 Preheat oven to 450 degrees F (230 degrees C).
Step #2 Roast peppers for about 25 mins, until the skins can easily be removed.
Step #3 Remove skins, & chop peppers.
Step #4 In a medium saucepan, green onion, onion, mix sliced peppers with tomatillos, red pepper, & garlic.
Step #5 Stir in chicken broth.
Step #6 Heat to a boil, reduce heat, & let simmer 15 mins.
Step #7 Heat oil in a large skillet over med-heat/flame.
Step #8 Dredge chicken in flour, then saute briefly.
Step #9 Pour tomatillo mixture over chicken.
Step #10 Spice up with oregano, salt, black pepper, & cayenne pepper.
Step #11 Simmer for 25 mins, or until chicken is no longer pink.
Step #12 Stir in the cilantro just before serving.
