Crock Pot Tijuana Turkey Recipe

Ingredients
  • 1 tsp ground cumin .
  • 1 lb turkey breast, cut into 3/4 inch cubes .
  • 1 small green bell pepper, finely sliced .
  • 1/2 tsp salt .
  • 1/4 c sliced fresh cilantro .
  • 3 c hot cooked rice .
  • 1 garlic clove, minced .
  • 1 tbsp chili powder .
  • 1 tbsp brown sugar .
  • 3 tbsps unsweetened cocoa powder .
  • 1 small onion, minced .
  • 2 tbsps cornmeal .
  • 1 tsp dried oregano leaves, crushed .
  • 1 1/2 c water .
  • 1 1/2 tbsps smooth peanut butter .
  • 1/8 tsp ground red pepper .
  • 1/4 tsp ground cinnamon .
  • 1 (8 oz) can tomato sauce

Directions
  • Step #1 Combine turkey, onion, bell pepper, & garlic in a 3 1/2 quart slow cooker (aka crockpot).
  • Step #2 In a small bowl, chili powder, cocoa powder, mix brown sugar, salt, cinnamon, cumin, oregano, cornmeal, & red pepper.
  • Step #3 Stir into turkey mixture.
  • Step #4 Whisk tomato sauce with water & peanut butter; pour over turkey mixture, mixing well.
  • Step #5 Cover up & cook on LOW 4 to 5 hrs.
  • Step #6 Serves 4.
  • Step #7 Serve over hot cooked rice.
  • Step #8 Sprinkle top with cilantro.
