Dijon Chicken Kabobs Recipe

Ingredients
  • 1/2 c Dijon mustard
  • 1/4 c minced fresh parsley
  • 1 tbsp finely sliced green onion
  • 2 c soft bread crumbs
  • 1 1/4 lbs boneless, skinless chicken breast halves, cut into 1-inch cubes

Directions
  • Step #1 In a bowl, mix mustard & onion.
  • Step #2 In another bowl, mix bread crumbs & parsley.
  • Step #3 Toss chicken in mustard mixture, then coat evenly with crumb mixture.
  • Step #4 Line a baking sheet with foil; coat the foil with nonstick cooking spray.
  • Step #5 Thread chicken onto metal or soaked wooden skewers, leaving a small space between chunks.
  • Step #6 Place on the prepared baking sheet.
  • Step #7 Bake, uncovered, at 450 degrees F for 6-8 mins or until juices run clear.
