Shrimp And Sausage Jambalaya Recipe

Ingredients
  • 1 (14 1/2 oz) can sliced tomatoes .
  • 4 bay leaves .
  • 1/2 lb medium shrimp, peeled & deveined .
  • 1 tsp salt .
  • 1/4 c sliced green onions .
  • 1/2 tsp cayenne .
  • 1/4 tsp black pepper .
  • 1/4 c barbecue sauce .
  • 1 c long-grain white rice .
  • 1/2 c sliced green bell peppers .
  • 1/4 tsp dried thyme .
  • 1/2 c sliced celery .
  • 1/2 lb smoked sausage, sliced .
  • 1 1/2 c sliced onions .
  • 1 tbsp sliced garlic .
  • 1 tbsp olive oil

Directions
  • Step #1 Heat the oil In a large-ish skillet over med-heat/flame.
  • Step #2 Add onion, bell pepper & celery & saute for 7 to 8 mins.
  • Step #3 Add the shrimp & bay leaves & cook this until the shrimp turn pink, about 2 mins.
  • Step #4 Add the sausage & cook for 2 to 3 mins.
  • Step #5 Add tomatoes (with juice), salt, garlic, cayenne, pepper & thyme.
  • Step #6 Cook for 10 mins, stirring often.
  • Step #7 Add the rice & stir this to mix.
  • Step #8 Cover up & cook over medium-low heat for 30 mins, or until the rice is done & liquid is absorbed.
  • Step #9 Stir in barbecue sauce.
  • Step #10 Remove from heat & let this stand for 5 mins.
  • Step #11 Remove the bay leaves.
  • Step #12 Stir in green onions.
