Fettuccini Alfredo Recipe

Ingredients
  • 1/2 c part-skim ricotta cheese .
  • 1/2 c plain low-fat yogurt .
  • 1 tbsp unsalted butter, melted .
  • fresh black pepper .
  • 12 oz fettuccine pasta .
  • 1/2 c grated pecorino romano cheese

Directions
  • Step #1 Cook the noodles according to package directions, omitting the salt.
  • Step #2 Drain well & return to the cooking pot.
  • Step #3 In a food processor/blender or mixer, yogurt, mix ricotta cheese, Romano cheese, & butter; mix.
  • Step #4 Add the cheese mixture to the cooked fettuccini & toss to coat.
  • Step #5 Add fresh ground black pepper.
  • Step #6 Serve warm & sprinkle with remaining Romano & more ground pepper to taste.
