Baked Macaroni & 3 Cheese (light) Recipe

Ingredients
  • 1 c low-fat monterey jack & colby cheese, grated (or similar) .
  • 1 1/2 c skim milk .
  • 1/2 c Velveeta cheese, cubed .
  • 1/2 tsp dry mustard .
  • 1 tsp salt .
  • 1/2 c reduced-fat Italian cheese mix, grated (or similar) .
  • 1/4 tsp pepper .
  • 2 tbsps light margarine .
  • 8 oz macaroni, cooked according to package directions .
  • 1/4 c flour

Directions
  • Step #1 In bowl, salt, mustard, mix flour, pepper & milk until smooth.
  • Step #2 Melt butter in large saucepan.
  • Step #3 Remove from heat & slowly stir in the milk mixture until smooth.
  • Step #4 Stirring constantly, cook over med-heat/flame until thickened (about 10 mins).
  • Step #5 Remove from heat.
  • Step #6 Stir in cheeses until melted.
  • Step #7 Combine cheese mixture with macaroni in greased 2 quart casserole.
  • Step #8 Bake in 375 degree oven for 25 mins or until lightly browned.
