Cherry Clafouti Recipe

Ingredients
  • 8 egg whites
  • 1 tbsp confectioners' sugar for dusting
  • 3 tbsps kirsch (cherry brandy)
  • 1 (7 inch) vanilla bean, split lengthwise & crushed
  • 1 c skim milk
  • 3 tbsps all-purpose flour
  • 1 1/2 lbs pitted fresh sweet cherries
  • 1 tbsp unsalted butter
  • 1 c heavy cream
  • 1/4 c white sugar
  • 1/2 tsp salt

Directions
  • Step #1 Preheat the oven to 325F degrees F (165 degrees C).
  • Step #2 Grease a 10 inch tart pan, or a similar sized baking dish.
  • Step #3 Spread out the cherries in the bottom of the prepared pan, & set aside.
  • Step #4 In a small bowl, whisk together the flour, salt & sugar.
  • Step #5 In a medium bowl, whisk together the egg whites, milk & cream.
  • Step #6 Stir in the kirsch & vanilla bean.
  • Step #7 Gradually whisk in the flour mixture until smooth.
  • Step #8 Remove the vanilla bean from the batter, & pour it over the cherries.
  • Step #9 Bake for 45 mins in the preheated oven, or until puffed & browned.
  • Step #10 Let cool until the top sinks in slightly.
  • Step #11 Dust with confectioners' sugar before serving.
