Couscous Salad With Dried Fruits Recipe

Ingredients
  • 1/8 tsp fresh ground black pepper .
  • 1/8 tsp ground ginger .
  • 3 tbsps fresh lemon juice .
  • 1 dash ground cinnamon .
  • 3/4 c sliced onions .
  • 1/4 tsp ground turmeric .
  • 1 c uncooked couscous .
  • 1/4 c golden raisins .
  • 1/2 tsp ground coriander .
  • 2 tbsps sliced green onions .
  • 1/2 tsp salt .
  • 1/4 c coarsely sliced fresh mint .
  • 2 tbsps olive oil, divided .
  • 1/4 c sliced pitted dates .
  • 1/4 c slivered almonds, toasted .
  • 1/2 tsp ground cumin .
  • 1 1/2 c fat-free chicken broth .
  • 2 tbsps sliced green olives .
  • 1 c halved cherry tomatoes .
  • 1 dash ground allspice .
  • 1/4 c sliced dried apricots .
  • 1 tsp hungarian hot paprika

Directions
  • Step #1 Heat 1 tbsp oil in a saucepan over medium-high heat; add in onion; stir/saute 5 mins or until tender.
  • Step #2 Add in paprika & the next 7 ingredients; stir/saute 30 seconds.
  • Step #3 Add in broth; bring to a boil.
  • Step #4 Gradually stir in the couscous; remove this from heat.
  • Step #5 Cover up & let this stand 5 mins; fluff couscous with a fork.
  • Step #6 Transfer couscous to a big bowl; add in 1 tbsp oil, tomatoes, & remaining ingredients; toss well.
  • Step #7 Serve warm or at about room temp.
