Sholeh-zard Recipe

Ingredients
  • almonds, crushed .
  • 1/2 tsp saffron .
  • 1 tsp cinnamon .
  • 1 kg sugar .
  • 1/2 c rose water .
  • cooking oil .
  • pistachios, crushed .
  • 500 g rice

Directions
  • Step #1 Wash rice a few times until the water is clear, then drain.
  • Step #2 Add six times water & bring to a boil, removing the foam.
  • Step #3 When rice softens completely, add sugar & stir well.
  • Step #4 Dissolve saffron in half a c of hot water & add to the mix.
  • Step #5 Heat up oil & also add to the mix.
  • Step #6 Add in most of the almonds & the rosewater.
  • Step #7 Stir well & cover.
  • Step #8 Cook in oven at low temperature for half an hr.
  • Step #9 Serve with pistachio, almond & cinnamon sprinkled on top.
