Thai Hot Chicken & Coconut Curry Recipe

Ingredients
  • 1 lb chickens (u can use any other kind of meat u like, beef goes really well) .
  • 2 c coconut milk .
  • 2 tbsps red curry paste .
  • 2 red chilies, sliced .
  • 2 tbsps sliced fresh cilantro leaves .
  • cooked rice, to serve .
  • 2 garlic cloves, crushed .
  • 1 tbsp lime juice .
  • 1/2 tsp turmeric .
  • 3/4 tsp salt .
  • 2 tbsps Thai fish sauce .
  • 2 tbsps sliced fresh basil leaves or 3/4 tsp dried basil leaves

Directions
  • Step #1 1.
  • Step #2 Put coconut milk in a saucepan & bring to a boil.
  • Step #3 Lower the heat & let simmer carefully for 10 mins until a little thick.
  • Step #4 Stir in red curry paste & garlic & let simmer for 5 more mins.
  • Step #5 2.
  • Step #6 Cut chicken into bite sized pcs & add them to the pan & bring to a boil.
  • Step #7 Lower the heat & add the lime juice, chillies, fish sauce, turmeric & salt.
  • Step #8 3.
  • Step #9 Cover up & let simmer for 15 mins or till chicken is cooked.
  • Step #10 You can add a little water if the sauce looks dry.
  • Step #11 4.
  • Step #12 Stir in basil & cilantro, adjust salt & serve this with white rice.
  • Step #13 (if using dry basil leaves let it simmer for 2 more mins).
