Shrimp Bisque (emeril's) Recipe

Ingredients
  • 1 lemon, halved .
  • 2 1/2 tsps salt .
  • 1 tbsp olive oil .
  • 1 tbsp olive oil .
  • 1 tbsp sliced fresh basil leaves .
  • 1 c sliced celery .
  • Shrimp Stock .
  • 4 quarts water .
  • 1 tsp sliced fresh oregano leaves .
  • 1 c sliced celery .
  • 1/2 c heavy cream .
  • 1/4 c butter, room temperature .
  • 1/2 tsp salt .
  • cornstarch (optional) .
  • 6 garlic cloves, peeled .
  • 1/4 tsp ground cayenne pepper .
  • 3 lbs medium shrimp, peeled & deveined (shells reserved for stock) .
  • 1 c sliced onions .
  • 1/2 tsp black peppercorns .
  • 3 tbsps tomato paste .
  • 1 tsp sliced fresh thyme leaves .
  • 2 bay leaves .
  • 1 c sliced carrots .
  • 1 c brandy .
  • 2 tsps sliced fresh tarragon leaves .
  • 4 bay leaves .
  • 1 tsp salt .
  • Bisque .
  • 1/2 tsp black pepper .
  • 2 c sliced onions .
  • 5 sprigs fresh thyme .
  • 1 c sliced carrots .
  • 1/4 c flour

Directions
  • Step #1 Stock:.
  • Step #2 In a large stockpot over medium-high heat heat the olive oil.
  • Step #3 Add the sliced onions, carrots, celery, salt & black pepper.
  • Step #4 Saute the vegetables for about 30 mins or until soft.
  • Step #5 Squeeze the lemon halves in the vegetables & add lemon rinds to pot.
  • Step #6 Add all remaining stock ingredients.
  • Step #7 Bring stock to a boil & reduce heat to medium & let simmer uncovered for 1 hr.
  • Step #8 Remove from heat & strain stock using a cheesecloth or a fine-mesh strainer & set aside.
  • Step #9 This will make about 3 quarts.
  • Step #10 Bisque:.
  • Step #11 In a large heavy Dutch oven heat the olive oil over medium high heat.
  • Step #12 Add the onions, celery, carrots, salt & cayenne pepper.
  • Step #13 Saute until vegetables are soft about 20 mins.
  • Step #14 Add the herbs, tomato paste & brandy.
  • Step #15 Cook & stir vegetable mixture for about 5 mins.
  • Step #16 Add the shrimp stock & bring to a boil.
  • Step #17 Reduce heat to medium & let simmer for 1 hr.
  • Step #18 Make a beurre manie' by combining the softened butter & flour in a small bowl & mix until have have a smooth paste.
  • Step #19 Add the mixture one tbsp at a time whisking well after each addition.
  • Step #20 Cook for 5 mins.
  • Step #21 Slowly add the cream & shrimp & stir this to mix.
  • Step #22 Bring to a gentle simmer & cook for 15 mins.
