Flounder With Ratatouille Recipe

Ingredients
  • 1 lb flounder fillets .
  • 1 tsp dried thyme .
  • 2 tomatoes, sliced & seeded .
  • 1 tsp sweet paprika .
  • pepper .
  • 1 eggplant, cut into 1/2-inch cubes .
  • 3 tbsps extra-virgin olive oil .
  • 2 tsps butter .
  • salt

Directions
  • Step #1 In a colander set in the sink, sprinkle 2 tsps salt on the eggplant an dlet drain for 15 mins.
  • Step #2 Rinse the eggplant & squeeze dry with your hands.
  • Step #3 In large skillet, heat the oil over medium-high heat until rippling.
  • Step #4 Add the eggplant & cook, stirring every once in awhile, until softened & lightly browned about 20 mins.
  • Step #5 Meanwhile, pat dry the flounder fillets & season both sides with paprika & 1/2 tsp each of salt & pepper.
  • Step #6 In a large nonstick skillet, melt the butter over medium-high heat.
  • Step #7 Add the flounder in single layer, cook for 4 mins, then flip carefully & continue cooking until lightly golden about 4 mins more.
  • Step #8 Divide among 4 dinner plates.
  • Step #9 Stir the tomatoes into the eggplant & cook this until just heated through.
  • Step #10 Spice up with thyme & 1/2 tsp pepper.
  • Step #11 Spoon over the flounder.
