Walnut Banana Cupcakes Recipe

Ingredients
  • 1/4 c butter, softened .
  • 1 3/4 c confectioners' sugar .
  • 1/4 c sour cream .
  • 3 tbsps sliced walnuts .
  • 1/2 tsp baking soda .
  • 1/4 tsp salt .
  • 2 eggs .
  • 4 oz cream cheese, softened .
  • 1/2 c mashed ripe bananas .
  • 1 tsp vanilla extract .
  • 1/2 tsp vanilla extract .
  • Cream Cheese Frosting .
  • 1/2 tsp ground nutmeg .
  • 3/4 c sugar .
  • 1 c flour

Directions
  • Step #1 In a small mixing bowl, cream butter & sugar.
  • Step #2 Add eggs, one at a time, beating well after each addition.
  • Step #3 Add banana & vanilla; mix well.
  • Step #4 Combine the flour, baking soda, nutmeg & salt; add to creamed mixture alternately with sour cream.
  • Step #5 Fill paper-lined muffin c have full.
  • Step #6 Bake at 350 for 18-22 mins or until a toothpick comes out clean.
  • Step #7 Cool for 10 mins before removing from pan to a wire rack to cool completely.
  • Step #8 For frosting, in a small mixing bowl, mix cream cheese & vanilla.
  • Step #9 Gradually beat in confectioners' sugar.
  • Step #10 Frost ccakes; sprinkle with walnuts.
  • Step #11 Store in the refrigerator.
