Fenia's Pork Tenderloin With Orange Recipe

Ingredients
  • 1 kg pork tenderloins, cut into slices .
  • 1 tbsp Dijon mustard .
  • 3 tbsps olive oil .
  • 1 orange .
  • salt, pepper & sugar (to taste) .
  • 1/2 lemon, juice of .
  • 1 tbsp flour .
  • 2/3 c water

Directions
  • Step #1 Toss the pork in the dijon & salt & pepper to taste.
  • Step #2 Zest the orange; then juice it, clean out the orange fibres from within the c of pith remaining; cut the pith of the orange into good-sized slivers (these will be used in the recipe, finally, reserving juice; and, as well).
  • Step #3 Heat the oil in a shallow saucepan.
  • Step #4 Add meat slices & brown on both sides.
  • Step #5 Add orange juice, lemon juice, over low heat/flame, zest, pith, water & sugar (to taste) & cook, for 15 mins.
  • Step #6 Combine flour in a little water to make a slurry.
  • Step #7 Add to pork & juices to thicken sauce slightly.
  • Step #8 Serve over steamed, basmati rice.
