Colorful Rice Salad With Lemon Dressing Recipe

Ingredients
  • 3 green onions, thinly sliced (scallions) .
  • 1/2 red bell pepper, finely sliced .
  • 2 tbsps finely sliced fresh parsley .
  • 1/4 c extra virgin olive oil .
  • 1 1/2-2 c cooked brown rice .
  • 1/4 c fresh lemon juice .
  • 1 small summer squash, sliced .
  • 1 large tomato, sliced .
  • 2-3 garlic cloves, finely minced .
  • 1/4 c lentil sprouts (or other sprouts) .
  • 1 small carrot, grated .
  • salt & pepper .
  • 2 tbsps finely sliced fresh cilantro (optional) .
  • 1 c spinach leaves, rolled together tightly & very thinly sliced (chiffonade technique)

Directions
  • Step #1 Toss prepared vegetables together In a large-ish bowl.
  • Step #2 Place lemon juice in a small bowl.
  • Step #3 Drizzle in olive oil while whisking, to emulsify the liquids.
  • Step #4 Add to the vegetables; cover & put in the fridge for an hr.
  • Step #5 Add cooked, cooled rice; add salt & pepper to taste.
  • Step #6 Refrigerate until serving time.
  • Step #7 Delicious with grilled or broiled steak, chicken or fish.
