Braised Chicken With Artichoke Recipe

Ingredients
  • 1 tbsp flour .
  • 1/2 c chicken broth .
  • 2 chicken breasts .
  • 1 (14 oz) can artichoke hearts, rinsed, drained, quartered .
  • 3 tbsps fresh parsley, minced .
  • 1/2 lb mushrooms, sliced .
  • 1/2 c onions, finely sliced .
  • 1 tbsp butter .
  • 1 tbsp garlic, minced .
  • beurre manie .
  • 1/2 c dry white wine .
  • 1 1/2 tbsps olive oil

Directions
  • Step #1 In heavy skillet heat oil over moderately high heat, brown chicken & transfer it to a plate.
  • Step #2 In fat remaining in skillet, cook onion & garlic over moderate heat until onion is slightly softened.
  • Step #3 Add mushrooms & salt & pepper to taste.
  • Step #4 Cook mixture over moderate heat.
  • Step #5 Add wine, broth, artichoke hearts & chicken.
  • Step #6 Bring liquid to a boil & let simmer mixture, covered, 15 to 20 mins, or until chicken is cooked through.
  • Step #7 Transfer chicken to platter & keep it warm.
  • Step #8 Whisk beurre manié into mushroom, whisking, 2 to 3 mins, salt & pepper mixture & let simmer the sauce, or until thickened.
  • Step #9 Stir in parsley & pour the sauce over the chicken.
