Herb-crusted Chuck Roast Recipe

Ingredients
  • 1/2 tsp dried rosemary, crushed .
  • 3 lbs chuck roast .
  • 1 tsp lemon juice .
  • 3 tbsps prepared horseradish .
  • SAUCE .
  • 1 tsp dried savory .
  • 1/4 tsp salt .
  • 2 tbsps olive oil .
  • 1 c sour cream .
  • 1 tsp ground mustard .
  • 1 tsp pepper .
  • 1/4 c dry breadcrumbs .
  • 1 garlic clove, minced

Directions
  • Step #1 In a bowl, mix the first seven ingredients.
  • Step #2 Rub over entire roast.
  • Step #3 Place on a rack in a shallow roasting pan.
  • Step #4 Bake uncovered, at 325F degrees F for 1-1/2 to 2 hrs or until meal is tender & reaches desired doneness.
  • Step #5 Medium-Rare, a meat thermometer should read 145 degrees F:.
  • Step #6 Medium, 160 degrees F:.
  • Step #7 Well-Done, 170 degrees F:.
  • Step #8 Meanwhile, in a bowl, mix the sauce ingredients.
