Ingredients

3 lbs chuck roast .
1 tsp lemon juice .
3 tbsps prepared horseradish .
SAUCE .
1 tsp dried savory .
1/4 tsp salt .
2 tbsps olive oil .
1 c sour cream .
1 tsp ground mustard .
1 tsp pepper .
1/4 c dry breadcrumbs .
1 garlic clove, minced
Directions
Step #1 In a bowl, mix the first seven ingredients.
Step #2 Rub over entire roast.
Step #3 Place on a rack in a shallow roasting pan.
Step #4 Bake uncovered, at 325F degrees F for 1-1/2 to 2 hrs or until meal is tender & reaches desired doneness.
Step #5 Medium-Rare, a meat thermometer should read 145 degrees F:.
Step #6 Medium, 160 degrees F:.
Step #7 Well-Done, 170 degrees F:.
Step #8 Meanwhile, in a bowl, mix the sauce ingredients.
Step #9 Serve with the roast.
