2 avocados, peeled & mashed-we make guacamole with Concord Foods Guacamole Mix (use half a package, If you want to add 1 spoonful of sour cream use the whole package) .
15 oz of health valley chili spicy black beans .
1 c shredded cheddar cheese or soy cheese .
1 c salsa .
1/2 c plain nonfat yogurt .
1-2 sweet potato, cooked & mashed .
2 green onions, minced .
1 c sliced romaine lettuce .
1 ripe tomato, dice (or can sliced tomato drained)
Directions
Step #1 Heat the chili & black beans in a small saucepan over low heat/flame till steaming hot.
Step #2 Cook sweet potatoes in the microwave.
Step #3 When cooked mash til smooth.
Step #4 Lay each tortilla flat on a dinner plate.
Step #5 Spoon 1/3 c of the sweet potatoes, & then the same amount of beans onto the center of the tortilla.
Step #6 You can either put your choice of the above ingredients inside the burrito or on top.
Step #7 We put guacamole, cheese, & salsa inside the burrito.
Step #8 Fold the burrito.
Step #9 Top each burrito with salsa, avocado, toatoes, onions, sliced lettuce, & finally a dallop of yogurt.
