Myan Burrito Recipe

Ingredients
  • tortillas .
  • 8 oz black beans, drained & rinsed .
  • 2 avocados, peeled & mashed-we make guacamole with Concord Foods Guacamole Mix (use half a package, If you want to add 1 spoonful of sour cream use the whole package) .
  • 15 oz of health valley chili spicy black beans .
  • 1 c shredded cheddar cheese or soy cheese .
  • 1 c salsa .
  • 1/2 c plain nonfat yogurt .
  • 1-2 sweet potato, cooked & mashed .
  • 2 green onions, minced .
  • 1 c sliced romaine lettuce .
  • 1 ripe tomato, dice (or can sliced tomato drained)

Directions
  • Step #1 Heat the chili & black beans in a small saucepan over low heat/flame till steaming hot.
  • Step #2 Cook sweet potatoes in the microwave.
  • Step #3 When cooked mash til smooth.
  • Step #4 Lay each tortilla flat on a dinner plate.
  • Step #5 Spoon 1/3 c of the sweet potatoes, & then the same amount of beans onto the center of the tortilla.
  • Step #6 You can either put your choice of the above ingredients inside the burrito or on top.
  • Step #7 We put guacamole, cheese, & salsa inside the burrito.
  • Step #8 Fold the burrito.
  • Step #9 Top each burrito with salsa, avocado, toatoes, onions, sliced lettuce, & finally a dallop of yogurt.
  • Step #10 serve right away.
