Cuban Beef Stew Recipe

Ingredients
  • 1 red bell pepper, sliced
  • 2 tbsps red wine vinegar
  • 1 (8 oz) can tomato sauce
  • 1/4 c raisins
  • 1/2 c dry sherry
  • 1 1/2 lbs sirloin tips, cubed
  • 1 onion, sliced
  • 1 tsp dried oregano
  • 1/2 tsp ground cumin
  • salt & pepper to taste
  • 2 bay leaves
  • 1/4 c pimento-stuffed green olives
  • 4 cloves garlic, minced
  • 2 tbsps capers
  • 4 potatoes, peeled & quartered
  • 2 tbsps olive oil

Directions
  • Step #1 In a large saute pan, heat oil over med-heat/flame.
  • Step #2 Cook onion & garlic in oil, stirring frequently, until transparent.
  • Step #3 Stir in cubed meat, & cook this until browned.
  • Step #4 Stir in red bell pepper, cumin, bay leaf, & oregano; cook for 2 to 3 mins.
  • Step #5 Stir in sherry, tomato sauce, raisins, vinegar, olives, & capers.
  • Step #6 Pour in enough water to just cover meat.
  • Step #7 Bring to boil, reduce heat to low, & cover.
  • Step #8 Simmer until fork tender, about 1 1/2 hrs.
  • Step #9 Add more water if the stew becomes too thick.
  • Step #10 Stir potatoes into the stew.
  • Step #11 Spice up with salt & pepper to taste.
  • Step #12 Cook, covered, until potatoes are almost tender.
  • Step #13 Uncover, & cook this until done.
