Smoked Chuck Shoulder Chili Recipe

Ingredients
  • 16 oz tomato sauce .
  • 1 tbsp minced garlic .
  • 3 c sliced onions .
  • 3 lbs shoulder boneless beef chuck roast (smoked,precooked weight) .
  • 1 tsp red pepper flakes .
  • 1 (14 oz) can beef broth .
  • 1/4 c chili powder (we like Williams brand) .
  • 1 tbsp ground oregano .
  • 3 sliced bell peppers .
  • 2 tbsps paprika .
  • 1/4 c peanut oil .
  • 1 bay leaf .
  • 1 tbsp cumin (ground) .
  • 1 1/2 tbsps unsweetened cocoa powder .
  • 2 minced jalapeno peppers (seeding is optional) .
  • 3 tbsps cider vinegar

Directions
  • Step #1 Cut smoked chuck into 1"x2" cubes or smaller if you like.
  • Step #2 In hot Dutch oven with hot peanut oil, suate onions & garlic until tender.
  • Step #3 Add chuck, jalapenos, chili powder, oregano,cumin,paprika,cocoa powder,and red pepper flakes.
  • Step #4 Mix together well & continue to cook this until heated well.
  • Step #5 Add beef broth, tomato sauce,vinegar & bay leaf.
  • Step #6 Bring to boil, then reduce to simmer.
  • Step #7 Remove bay leaf after 15 mins.
  • Step #8 Simmer 1-1 1/2 hrs stirring often,adding water if necessary.
  • Step #9 Add sliced bell pepper & continue simmering until pepperws are tender.
