Sweet Cornbread With Savory Variations Recipe

Ingredients
  • 2 1/2 tsps baking powder .
  • 2 large eggs .
  • 3/4 tsp salt .
  • 1/4 c butter, cooled & melted or 1/8 lb margarine .
  • 1 c yellow cornmeal .
  • 1 c buttermilk .
  • 2 tbsps sugar, add up to 1/3 c .
  • 1 c all-purpose flour

Directions
  • Step #1 In a bowl, baking powder, mix flour, cornmeal, sugar, & salt.
  • Step #2 In another bowl, beat eggs to mix with buttermilk & 1/4 c butter.
  • Step #3 Pour liquids into flour mixture & stir just until evenly moistened.
  • Step #4 Scrape batter into a buttered 8-inch square pan & spread smooth.
  • Step #5 Bake in a 400-degree oven until bread springs back when lightly pressed in the center & begins to pull from pan sides, about 25 mins (20 mins in a convection oven).
  • Step #6 Cut bread into squares.
  • Step #7 Lift from pan with a slender spatula.
