Ginger-sesame Stir-fry Recipe

Ingredients
  • 2 tsps toasted sesame oil .
  • 4 garlic cloves, minced .
  • 1 lb boneless skinless chicken breasts, sliced .
  • 4 scallions, thinly sliced .
  • 2 tsps cornstarch, dissolved in 2/3 c water .
  • 2 tbsps canola oil .
  • 1 tbsp fresh grated fresh ginger .
  • 1 red bell pepper, cored & thinly sliced .
  • 1 1/2 bunches Broccolini, sliced diagonally .
  • 1 c sushi rice, rinsed & drained .
  • 1/2 tsp salt .
  • 1 1/4 c water

Directions
  • Step #1 Combine rice & water in small saucepan & bring to a boil.
  • Step #2 Reduce heat to low, cover, & let simmer 20 mins.
  • Step #3 Remove from heat & let this stand ten mins without lifting cover.
  • Step #4 Preheat wok or large heavy-bottomed skillet over high heat 30 seconds.
  • Step #5 Add canola oil, ginger, garlic, & scallions & stir 1 min until scallions begin to soften.
  • Step #6 Add chicken & continue to stir 2 mins, until surfaces of chicken are mostly white.
  • Step #7 Add broccolini & pepper.
  • Step #8 Stir until slightly softened, 1 min.
  • Step #9 Add cornstarch mixture & salt, stirring to coat ingredients.
  • Step #10 Bring to a boil, reduce heat to medium, & allow liquid to reduce to a thick sauce, about 1 min.
  • Step #11 Drizzle with sesame oil.
  • Step #12 Wer hands & shape rice into 4 balls.
  • Step #13 Serve with stir-fry.
