Irish Stew Recipe

Ingredients
  • 1/4 tsp dried thyme, crushed .
  • 1 1/2 c carrots, cut into 1/2 inch pieces (3 medium) .
  • 3 c beef broth .
  • 1/4 c quick-cooking tapioca .
  • 1 lb lean boneless lamb, cut into 1 inch pieces .
  • 2 1/2 c peeled turnips, cut into 1/2 inch pieces (2 medium) .
  • 1/2 tsp salt .
  • 1 1/2 c peeled potatoes, cut into 1/2 inch pieces (2 medium) .
  • 2 medium onions, cut into wedges .
  • 1/4 tsp black pepper .
  • 1 tbsp cooking oil

Directions
  • Step #1 In a large skillet brown lamb, half at a time in the hot oil.
  • Step #2 Drain off fat.
  • Step #3 Combine turnips, potatoes, tapioca, salt, onions, carrots, pepper & thyme in your slow cooker (aka crockpot).
  • Step #4 Stir in lamb & broth.
  • Step #5 Cover up & cook on low heat setting for 10-12 hrs or on high heat for 5-6 hrs.
