New New York Cheesecake Recipe

Ingredients
  • 2 c homemade ricotta cheese, drained for 1 hr or commercial ricotta cheese, plus .
  • 1/2 c sugar .
  • 1 tbsp lemon zest, drained for 1 hr .
  • 9 graham crackers .
  • 1 pinch salt .
  • 5 eggs, at about room temp .
  • 3 tbsps milk .
  • Crust .
  • 5 tbsps unsalted butter, melted .
  • 1 pinch salt .
  • 2 (8 oz) packages neufchatel cheese or cream cheese, at about room temp .
  • 1/3 c sugar .
  • Filling .
  • 1/8 tsp cinnamon (optional) .
  • 3 tbsps vanilla, scraped & steeped in warmed milk & cooled or 1 vanilla bean, scraped & steeped in warmed milk & cooled

Directions
  • Step #1 Crust:.
  • Step #2 Place graham crackers, sugar, salt, & cinnamon in food processor/blender.
  • Step #3 Pulse until it resembles fine crumbs.
  • Step #4 Add butter & pulse until loose mixture forms.
  • Step #5 Press into 9 inch springform pan, & bake this at 350 degrees of 10 mins.
  • Step #6 Allow to cool.
  • Step #7 Filling:.
  • Step #8 Combine ricotta, salt & milk (or cooled milk+ vanilla bean, sugar, eggs, cream cheese, with bean discarded) & mix until smooth.
  • Step #9 Spray side of springform pan with cooking spray.
  • Step #10 Pour filling into prepared pan, & smooth with a spatula.
  • Step #11 Bake at 325F degrees, & check after 45 mins.
  • Step #12 If knife inserted into center comes out clean, it is cooked through.
  • Step #13 Other wise cook this until knife comes out clean, checking every 1o mins.
  • Step #14 If top starts to brown, cover with aluminum foil wrap.
  • Step #15 Allow to cool 1 hr a room temperature & at least for hrs covered with plastic wrap put in the fridged.
