Ingredients
1 tbsp olive oil .
1/2-3/4 tsp Tabasco sauce (to taste) .
3 small onions, sliced .
1 tsp salt .
1 (16 oz) package smoked sausage, sliced .
1 lb shrimp, peeled & de-veined & cooked .
1-2 boneless skinless chicken breast, sliced .
1 1/2 c long grain rice, uncooked .
1 green bell pepper, sliced .
3 c chicken broth .
4 garlic cloves, minced .
1/4-1/2 tsp ground thyme (to taste) .
1 bay leaf .
1 (14 1/2 oz) can sliced tomatoes .
1/2 tsp ground pepper .
1/4 c celery, sliced .
4-6 slices bacon, sliced
Directions
Step #1 In a dutch oven, fry the bacon & chicken until they are done.
Step #2 Remove the bacon & chicken into a paper towel lined bowl.
Step #3 Be sure & leave all the grease in the pan.
Step #4 Cook the onions, garlic, bell pepper & celery in the grease left in the dutch oven.
Step #5 About 5-7 mins.
Step #6 Add the shrimp & sausage to the onion mixture & cook about 4 mins or until heated through.
Step #7 Be careful not to cook this to long or the shrimp will be tough.
Step #8 Remove this mixture from the pan.
Step #9 Add about a tbsps of olive oil to the pan.
Step #10 Put in your rice & cook about ten mins stirring frequently to prevent the rice from scorching.
Step #11 Add the chicken broth, tomatoes, thyme, pepper, salt, tabasco & bay leaf.
Step #12 Stir.
Step #13 Bring this mixture to a boil & then turn heat down to simmer, cover & cook about 15-20 mins.
Step #14 Remove bay leaf from rice mixture.
Step #15 Stir in your bacon & chicken mixture & your shrimp & onion mixture.
