Polenta Lasagna With Feta And Kale Recipe

Ingredients
  • 1 tsp fresh rosemary, minced .
  • 2 tbsps extra virgin olive oil .
  • extra virgin olive oil, to grease baking pan .
  • 1 1/4 c feta cheese, mashed with fork .
  • 1 small carrot, sliced .
  • 1 c pecorino romano cheese, shredded .
  • 1/2 yellow onion, sliced finely .
  • 1/4 c pitted kalamata olives, sliced finely .
  • 1 c marinara sauce .
  • 1 (18 oz) package prepared polenta (in a tube) .
  • 5 garlic cloves, minced .
  • 1 bunch lacinato kale, shredded

Directions
  • Step #1 Preheat oven to 375 degrees F.
  • Step #2 In a large pan, heat olive oil over medium-high flame.
  • Step #3 Sautee onions & rosemary until the onions begin to brown.
  • Step #4 Add garlic & carrots.
  • Step #5 Sautee until garlic fragrances the oil, about 2 mins.
  • Step #6 Add kale & sautee until tender, then remove pan from heat.
  • Step #7 Grease the bottom & sides of a 8x8" baking dish.
  • Step #8 Cut polenta into slices no thicker than 1/4 inch.
  • Step #9 Line the bottom of the pan with 1/2 of the polenta slices, overlapping them slightly to cover the whole bottom of the pan.
  • Step #10 Pour 1/2 c of the marinara sauce over the polenta & spread it evenly.
  • Step #11 Distribute mashed feta cheese over the marinara sauce.
  • Step #12 Scatter olives over the feta, then top this with an even layer of the kale mixture.
  • Step #13 Place the remaining polenta slices in a layer, overlapping slightly.
  • Step #14 Spread remaining 1/2 c of marinara sauce.
  • Step #15 Sprinkle top shredded pecorino evenly across the top.
  • Step #16 Bake for 25 mins or until the top layer of cheese is beginning to brown around the edges.
  • Step #17 Allow to sit for 5-10 mins before slicing & serving (use a spatula).
