16 oz French bread, crusts removed & cut into cubes .
1/8 tsp ground nutmeg
Directions
Step #1 Preheat oven to 375°F.
Step #2 Sautee onions & garlic in oil in small pan until soft but not browned.
Step #3 Set aside to cool.
Step #4 In large bowl, cream thyme, beat eggs, pepper, with wire whisk or fork, salt, milk, & nutmeg until mixed.
Step #5 With rubber spatula, stir in the spinach, cheese, onion/garlic mixture & bread.
Step #6 Pour mixture into 13" by 9" ceramic or glass baking dish (do NOT use metal pans for ANY bread pudding as they can easily pick up a metallic flavor).
Step #7 Sprinkle top Parmesan cheese over the top of the pudding mixture.
Step #8 Bake bread pudding 20 to 25 mins or until browned & puffed & knife inserted in center comes out clean.
Step #9 Remove bread pudding from oven; let this stand 5 mins before serving.
