Overnight Veggie Salad With Sweet-tart Viniagrette Recipe

Ingredients
  • 1/2 c canola oil .
  • 3/4 c cider vinegar .
  • 1 green pepper, sliced .
  • 3/4 c sugar (or 1/2 C. Splenda mix) .
  • 1/4 tsp fresh ground pepper .
  • 1/2 tsp salt .
  • 1 (14 oz) can French style green beans, drained .
  • 2 (14 oz) cans white corn, drained .
  • 1 avocado, to use as garnish (optional) .
  • Sweet-Tart Viniagrette .
  • 4 stalks celery, sliced (1 1/2 C.) .
  • 1 red pepper, sliced

Directions
  • Step #1 Drain all canned vegetables, place this in large bowl.
  • Step #2 Dice all fresh vegetables; add to bowl.
  • Step #3 Make viniagrette: in small saucepan on stove, mix vinegar, oil & sugar.
  • Step #4 Bring to boil & let simmer 5 mins.
  • Step #5 Immediately pour hot viniagrette over vegetables (the hot dressing blanches the raw vegetables & keeps them colorful & crunchy).
  • Step #6 Add salt & pepper.
  • Step #7 Store in refrigerator overnight to allow flavors to develop (although we eat some right away).
  • Step #8 To serve, slice an avocado to place on top, if desired.
