Whole Grain, Almond , Soy Tortillas Recipe

Ingredients
  • 1 c sprouted spelt berries .
  • 20 sheets wax paper (10x10 squares) .
  • 2 c soy flour (you can use any flour) .
  • 2/3 c raw almonds .
  • extra soy flour .
  • 1 c dry oatmeal .
  • 1 1/2 c water (or veggie broth)

Directions
  • Step #1 To a food processor/blender add the water & almonds to make almond milk.
  • Step #2 Add the oat groats & spelt berries, process until mixture is thick, add more water if needed.
  • Step #3 In a large bowl mix the soy flour & liquid, make into a dough round.
  • Step #4 Adding more flour as needed -- knead the dough about 3 mins.
  • Step #5 Make a ball of dough in your hand, place it on a piece of wax paper, place another piece of wax paper on top, use a rolling pen to flatten it out into a round.
  • Step #6 Continue until you have all the tortillas between wax paper.
  • Step #7 Now you can freeze them.
  • Step #8 To use -- while frozen peel off the wax paper, place this in an oiled fry pan with medium heat.
  • Step #9 Turn once--you can place your toppings on right in the pan if you wish.
