Rosti-filled Onions Recipe

Ingredients
  • 2 large potatoes, grated .
  • 3 tbsps coarse grain mustard .
  • 25 g butter .
  • 2 tbsps olive oil .
  • 4 large onions, sliced into quarters, keeping root intact .
  • 75 g vegetarian gruyere cheese, grated

Directions
  • Step #1 Heat oven to 200°C Place the onions on a baking tray, season, brush with olive oil, then cook for about 1 hr until golden & tender.
  • Step #2 Meanwhile, mix the potato & carrot together, then stir in the the mustard & seasoning.
  • Step #3 Divide the mixture between the onions, then dot the top of each one with a little butter.
  • Step #4 Return the onions to the oven & cook for 15 mins until they are tender.
  • Step #5 Sprinkle top with the cheese, then cook for a further 5 mins until the topping is golden & bubbling.
