Penne With Oyster Mushrooms, Prosciutto, And Mint Recipe

Ingredients
  • 1/2 lb penne .
  • 2 slices prosciutto, sliced .
  • 1 lb oyster mushrooms, sliced, tough stems removed .
  • 1/2 c sliced mint .
  • 2 garlic cloves, thinly sliced .
  • 1 tsp kosher salt .
  • fresh ground black pepper .
  • 3 tbsps olive oil .
  • 1 tbsp kosher salt (plus) .
  • 1 c grated Fontina cheese, preferably Italian .
  • 1/2 c chicken broth

Directions
  • Step #1 Bring a large pot of water to boil.
  • Step #2 Add 1 T.
  • Step #3 salt & penne.
  • Step #4 Cook until barely tender to the bite.
  • Step #5 Drain; set aside.
  • Step #6 In the same pot, heat olive oil over high heat.
  • Step #7 Add mushrooms & remaining tsps salt & cook, until mushrooms stop giving off liquid & start to brown, stirring constantly, about 10 mins.
  • Step #8 Turn heat to medium-high & add garlic.
  • Step #9 Cook, until fragrant, stirring, about 2 mins.
  • Step #10 Stir in chicken broth & penne & cook this until broth is absorbed.
  • Step #11 Stir in cheese until melted & coating the pasta.
  • Step #12 Take off heat & stir in the mint.
  • Step #13 Serve as soon as possible, topped with prosciutto & pepper.
