Apricot Pecan Tassies Recipe

Ingredients
  • 2/3 c dried apricot halves, sliced (about 4 oz) .
  • 6 tbsps reduced calorie cream cheese .
  • 1/3 c pecans, sliced .
  • 1/2 c butter, cut into pieces .
  • Filling .
  • 1/2 tsp vanilla .
  • 1 c all-purpose flour .
  • 1/4 tsp salt .
  • 1 egg, lightly beaten .
  • Base .
  • 3/4 c light brown sugar, firmly packed .
  • 1 tbsp butter, softened

Directions
  • Step #1 For Base:.
  • Step #2 In food processor/blender, mix flour, 1/2 c butter & cream cheese; process until mixture forms a large ball.
  • Step #3 Wrap dough in plastic wrap & chill for at least 15 mins.
  • Step #4 For Filling:.
  • Step #5 Combine brown sugar, 1 tbsp buter, egg, vanilla & salt in a bowl until smooth.
  • Step #6 Stir in apricots & nuts.
  • Step #7 Preheat oven to 325°F Shape dough into 2 dozen 1 inch balls & place this in paper lined or greased miniture muffin tins.
  • Step #8 Press dough on bottom & up sides of each c.
  • Step #9 Fill each with 1 tsp apricot-pecan filling.
  • Step #10 Bake 25 mins or until golden & filling sets.
  • Step #11 Cool & remove this from c.
  • Step #12 Cookies can be wrapped tightly in plastic & frozen up to 6 weeks.
