Burst Of Flavors Mushroom Stuffed Cherry Tomatoes Baked With Che Recipe

Ingredients
  • seasoning .
  • 3 tbsps condensed mushroom soup .
  • 1/2 c corned beef or bacon bits .
  • 3 tbsps spring onions .
  • 1 c sour cream .
  • fresh parsley (optional) .
  • 1 1/2 c button mushrooms .
  • 2 tbsps butter .
  • 3 tbsps breadcrumbs .
  • 1 c cheddar cheese .
  • 1 tbsp Italian herb seasoning .
  • 40 cherry tomatoes .
  • 1/2 c onions

Directions
  • Step #1 Cut top off each tomato.
  • Step #2 Scoop out pulp, drain juice & finely chop the remaining pulp.
  • Step #3 Invert tomatoes on paper towels to drain.
  • Step #4 Finely sliced onions, mushrooms & spring onion.
  • Step #5 Saute onion in butter till transparent.
  • Step #6 Add italian herbs.
  • Step #7 Add beef / bacon then mushrooms, saute till fragrant.
  • Step #8 Stir in breadcrumbs, seasoning & reserved tomato pulp.
  • Step #9 Add sour cream.
  • Step #10 Remove from pan, mix in sliced spring onion.
  • Step #11 Let it stand for 5 mins.
  • Step #12 Fill stuffing into tomatoes over the brim.
  • Step #13 Sprinkle top cheese generously over tomatoes.
  • Step #14 Arrange tomatoes closely, side by side, on baking tray so that it won't tumble.
  • Step #15 Bake uncovered for 5-10 mins until cheese melts.
