Sherry-pecan Balls Recipe

Ingredients
  • 1 1/2 c finely sliced pecans .
  • 1/2 c butter or margarine, softened .
  • 2 tbsps dry sherry .
  • 2 egg yolks .
  • 1 tsp grated orange rind .
  • 1/2 tsp vanilla extract .
  • 1 c flour .
  • 1/2 c sugar

Directions
  • Step #1 In a bowl stir this together flour & 1/2 c of the pecans to mix thoroughly; set aside.
  • Step #2 Spread remaining 1 c pecans in a shallow pan; set aside.
  • Step #3 In mixer bowl mix butter & sugar; beat until fluffy.
  • Step #4 Add egg yolks, one at a time, beating well after each addition.
  • Step #5 Blend in orange rind & vanilla.
  • Step #6 To butter mixture add flour mixture alternately with sherry, mixing to mix after each addition.
  • Step #7 Gather dough into a ball & enclose in plastic wrap.
  • Step #8 Refrigerate until dough is firm enough to shape (about 45 mins).
  • Step #9 Preheat oven to 350°F Shape dough into 1-inch balls; roll balls in pecans to coat evenly.
  • Step #10 Place about 1 inch apart on ungreased baking sheets.
  • Step #11 Bake until cookies are golden brown & feel firm when touched lightly (15 to 20 mins).
  • Step #12 Transfer to wire racks to cool.
