Step #1 Preheat oven to 300F degrees F (150 degrees C) In a medium bowl, cream together the brown sugar, white sugar & soy margarine.
Step #2 Add egg white, & mix well.
Step #3 In another bowl, stir this together the spelt flour, wheat flour, baking soda & salt.
Step #4 Add this to the sugar mixture & mix well.
Step #5 Finally, stir in the the dried cherries.
Step #6 Drop cookie dough from a tsp onto a lightly greased cookie sheet.
Step #7 Bake in preheated oven for 13 mins.
