Cold Peppered Capellini With Prosciutto Recipe

Ingredients
  • 1 tbsp fresh lemon thyme, sliced .
  • 1/3 c freshly grated parmesan cheese .
  • 2 tbsps olive oil .
  • 1/2 c sun-dried tomatoes, drained & sliced .
  • 1 large lemon .
  • 6 oz thinly sliced prosciutto, cut into 1/2-inch strips .
  • 1 tsp fresh lemon thyme, sliced .
  • 1 lb capellini or other thin pasta .
  • 5 scallions, trimmed & finely sliced .
  • 2 garlic cloves, smashed .
  • sliced black olives, to garnish (optional) .
  • 1 tsp black peppercorns, cracked

Directions
  • Step #1 Cook cappellini In a large-ish pan of boiling water 4-5 ,inutes, or until al dente.
  • Step #2 Rinse under cold water & drain throughly.
  • Step #3 Using a vegetable peeler, thiny peel rind from lemon, making sure not to get the white pith.
  • Step #4 Cut the rind into thin strips.
  • Step #5 Add strips to a pan of boiling water.
  • Step #6 Boil 1 min & drain.
  • Step #7 Heat oil in heavy nonstick skillet over med-heat/flame.
  • Step #8 Sauté garlic & half the scallions 3-4 mins, stirring frequently, until scallions are softened.
  • Step #9 Stir in prosciutto & rind.
  • Step #10 Cook 3-4 mins stirring frequently, until prosciutto is lightly browned.
  • Step #11 Remove from heat & cool.
  • Step #12 Combine pasta, prosciutto mixture & sun-dreid tomatoes, peppercorns, Parmesan cheese, & lemon thyme in a bowl.
  • Step #13 Cover up & put in the fridge several hrs.
  • Step #14 Sprinkle top with remaining scallions & extra cheese if necessary before serving.
  • Step #15 Top with a sprinkling of black olives.
  • Step #16 Serve with Merlot or Fumé.
