Mama's Italian Chicken Recipe

Ingredients
  • 1 c mirepoix (sliced celery, carrot, onion ( equal parts) .
  • 1 (1 7/8 oz) envelope dried Italian salad dressing mix .
  • 14 oz chicken broth .
  • 1 c sliced fennel .
  • 4 frozen chicken breast halves

Directions
  • Step #1 Pour miremoix & sliced fennel into the bottom of a greased 3 1/2 to 4 1/2 quart slow cooker (aka crockpot).
  • Step #2 Place the chicken on top of the vegetables.
  • Step #3 Sprinkle top with the salad dressing mix.
  • Step #4 Pour chicken broth over the top.
  • Step #5 Cover up & cook on high heat 4-5 hrs or low heat 8-10 hrs.
  • Step #6 Serve on a nest of buttered noodles, orzo, or creamy risotto.
  • Step #7 Sauce Option: Remove the chicken from the chicken stock & vegetables.
  • Step #8 Pour the mixture into a medium sauce pan & reduce by 2/3.
  • Step #9 Take the remaining mixture & pour it into the food processor/blender & process until smooth & creamy.
  • Step #10 Drizzle over the chicken & noodles.
  • Step #11 Garnish with grated asiago cheese & sliced scallions.
