Paw Paw Sorbet Recipe

Ingredients
  • 1 egg white .
  • 500 g pawpaw, deseeded, peeled, sliced .
  • 1/2 c caster sugar .
  • 3/4 c water

Directions
  • Step #1 Place a metal tin in the freezer to chill in the fridge.
  • Step #2 Combine paw paw, water & sugar in a saucepan over low heat/flame.
  • Step #3 Cook, stirring for 2-3 mins or until sugar dissolves.
  • Step #4 Increase heat to medium.
  • Step #5 Bring to the boil.
  • Step #6 Cook for 5 mins or until syrup thickens.
  • Step #7 Set aside to cool for 5 mins.
  • Step #8 Place mixture into food processor/blender & process until smooth.
  • Step #9 Place in metal container & freeze for 2 hrs or until almost set.
  • Step #10 Using a metal spoon, roughly break up the mixture.
  • Step #11 Return mixture to food processer adding the egg white.
  • Step #12 Process until smooth.
  • Step #13 Return to metal container & freeze for 4 - 6 hrs (or overnight).
