Ingredients
1/2 tsp salt .
1 tsp dried thyme .
1 tsp dried oregano .
2 tbsps fresh lemon juice .
6 tbsps olive oil .
3 garlic cloves, crushed .
1 lb fusilli (or other small pasta) .
salt & pepper .
12 oz broccoli florets .
1 small onion, sliced .
1 lb boneless skinless chicken breasts, cubed .
1 1/2 lbs plum tomatoes, quartered
Directions
Step #1 Preheat oven to 400°F.
Step #2 Place the plum tomatoes in a baking dish, covering with 1 tbsp oil, oregano & 1/2 tsp salt.
Step #3 Bake for 30-40 mins, until the tomatoes are just browned (DO NOT STIR).
Step #4 Meanwhile, bring a large saucepan of water to a boil.
Step #5 Add the broccoli & cook this until just tender, about five mins.
Step #6 Drain & set aside.
Step #7 Heat 2 tbsps of the oil In a large-ish frying pan over medium-high heat.
Step #8 Add the onion, thyme, chicken & season this with salt.
Step #9 Cook about 5-7 mins, until the meat is cooked & beginning to brown, stirring often.
Step #10 Add the garlic & cook for 1 min more, stirring frequently.
Step #11 Remove from the heat, stir in the lemon juice & season this with pepper.
Step #12 Set aside & keep warm.
Step #13 Cook the fusilli accoring to the directions on the package.
Step #14 Drain & place this In a large-ish bowl.
Step #15 Toss the pasta with the remaining oil.
Step #16 Stir the broccoli & chicken mixture into the pasta.
Step #17 Add the tomatoes & stir carefully to mix.
Step #18 Serve as soon as possible.
