Macaroni Loaf With Crèole Shrimp Sauce Recipe

Ingredients
  • 3 eggs, slightly beaten .
  • MACARONI LOAF .
  • 1 c cheddar cheese, shredded .
  • salt .
  • 2 tbsps parsley .
  • 1 c soft breadcrumbs .
  • 1/4 c sliced parsley .
  • 1/4 c water .
  • 1 (2 oz) can baby shrimp, drained .
  • 1 c uncooked elbow macaroni .
  • 1 tsp worcestershire sauce .
  • CREOLE SHRIMP SAUCE .
  • 2 tbsps onions, minced .
  • 2 tbsps green peppers, minced .
  • 1 (8 1/4 oz) can stewed tomatoes, crushed .
  • 2 tbsps celery, minced .
  • 1 tsp seasoning salt .
  • 1 tbsp cornstarch .
  • 1 small onion, minced .
  • 1/4 tsp black pepper .
  • 1 c half-and-half .
  • 1 tbsp butter .
  • 1 vegetable bouillon cube

Directions
  • Step #1 Cook macaroni in boiling salted water for 10 mins or until tender.
  • Step #2 Drain.
  • Step #3 Set aside.
  • Step #4 Scald half-and-half & pour over bread crumbs.
  • Step #5 Add onion, eggs, cheese, seasoned salt & pepper, Worcestershire sauce & parsley.
  • Step #6 Stir in macaroni.
  • Step #7 Turn into a well-greased 7 1/2 x3 1/2 loaf pan.
  • Step #8 Set in roasting pan or other deep pan.
  • Step #9 Add hot water to a depth of 1 inch.
  • Step #10 Bake at 350° for 45 mins or until firm & golden brown.
  • Step #11 Turn out onto platter, if desired turn right side up.
  • Step #12 Garnish with parsley & pass the sauce.
  • Step #13 CREOLE SAUCE: In a small saucepan, sauté first 4 ingredients in the butter until tender.
  • Step #14 Stir in rest of ingredients & bring to a boil.
  • Step #15 Cook, stirring, until thickened.
  • Step #16 Add shrimp if used.
