Caramel Apple Cookies Recipe

Ingredients
  • 3/4 c powdered sugar .
  • 1/4 tsp salt .
  • 3/4 c peanuts, finely sliced .
  • 1 1/2 c flour .
  • 36 flat toothpicks .
  • 2 tbsps water .
  • 30 pieces caramel candies .
  • 2/3 c butter, softened .
  • 3 tbsps frozen apple juice concentrate, thawed

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 In large bowl, beat powdered sugar, butter & 1 tbsp of the apple juice concentrate until light & fluffy.
  • Step #3 Stir in four & salt.
  • Step #4 Shape dough into 3/4 inch balls.
  • Step #5 Place 1 inch apart on ungreased cookie sheets.
  • Step #6 Bake 12-17 mins or until edges are light golden brown.
  • Step #7 Immediately insert toothpick in center of each cookie.
  • Step #8 Cool completely on wire racks.
  • Step #9 In a heavy saucepan over low heat/flame, mix caramels, 2 tbsps of apple juice concentrate & water.
  • Step #10 Cook until mixture is smooth, stirring constantly.
  • Step #11 Place nuts on a plate.
  • Step #12 Spoon caramel mixture over whole cookie, letting excess drip off.
  • Step #13 Press bottom of cookie into nuts; set on sheet of wax paper.
  • Step #14 Repeat with remaining cookies.
  • Step #15 If caramel becomes too thick, stir in the more water 1/4 tsp at a time.
