Vegetarian Shepherd's Pie W/wild Mushrooms Recipe

Ingredients
  • 1 (28 oz) can crushed tomatoes .
  • 4 c sliced baby portabella mushrooms .
  • 2 c grated cheddar cheese or monterey jack cheese .
  • 3 c sliced white button mushrooms .
  • 3 shallots, peeled & sliced .
  • sea salt, to taste .
  • 3 tbsps olive oil .
  • 2 tbsps grated parmesan cheese .
  • 5 portabella mushrooms, stems removed, rinsed, cut in half, then sliced crosswise .
  • 1 (2 oz) package mixed dried wild mushrooms .
  • ground pepper, to taste .
  • 2 c sliced shiitake mushrooms, rinsed & dried, stems removed .
  • 5 c leftover mashed potatoes (made with butter & milk) .
  • 3 carrots, peeled & sliced .
  • 6 celery ribs, peeled & sliced .
  • 2 bay leaves

Directions
  • Step #1 Preheat oven to 300°F.
  • Step #2 In a small pot, heat about 3 c of water to a boil.
  • Step #3 Add dried mushrooms & remove this from heat.
  • Step #4 Let sit for 30 mins to rehydrate.
  • Step #5 Meanwhile, In a large-ish Dutch oven, heat olive oil over med-heat/flame.
  • Step #6 Add all fresh mushrooms & cook for about 20 mins, stirring every once in awhile, uncovered, until most of the liquid has evaporated.
  • Step #7 Add shallot, carrots & celery & continue cooking for another 5 mins.
  • Step #8 Strain the dried mushrooms, reserving the soaking liquid, & add the mushrooms to the pot.
  • Step #9 Strain the soaking liquid through a fine mesh strainer to remove any grit.
  • Step #10 Add strained liquid to the mushroom mixture.
  • Step #11 Stir in bay leaves, tomatoes & one c of water.
  • Step #12 Spice up with salt & pepper.
  • Step #13 Continue cooking over low heat/flame until carrots are soft, about 15 mins.
  • Step #14 Remove from heat.
  • Step #15 Taste & adjust seasoning.
  • Step #16 The mushroom mix can be prepared up to two days ahead & put in the fridged.
  • Step #17 Spread the mushroom mix in the bottom of a 3-quart baking dish.
  • Step #18 Cover up with the mashed potatoes & sprinkle with the cheddar cheese & then the Parmesan.
  • Step #19 Bake until cheese is melted & pie is heated through, about 45 mins.
  • Step #20 Serve as soon as possible.
