Chocolate Crumble Muffins Recipe

Ingredients
  • 1 pinch salt .
  • 3 oz bittersweet chocolate (grated or finely sliced) .
  • 1/3 c sugar, plus .
  • 1 3/4 c self-rising flour .
  • 1 large egg, slightly beaten .
  • 3/4 c light cream (may need a little more or less) .
  • 1 tbsp sugar .
  • 6 tbsps unsalted butter, chilled & cut into small pieces .
  • chocolate chips, for garnish .
  • 1/2 c pecans, finely sliced (optional) or almonds, sliced (optional) .
  • 2 tbsps dried candied orange peel, finely sliced (recipe just said citrus peel, I love orange & chocolate together)

Directions
  • Step #1 Preheat oven to 425ºF.
  • Step #2 Butter a 12-hole muffin pan or line it with ccake papers.
  • Step #3 Sift the flour, salt & sugar into a mixing bowl.
  • Step #4 Add the butter & using the tips of your fingers, rub the mixture unitl it resembles fine bread crumbs.
  • Step #5 Stir in the chocolate, nuts (if using) & citrus peel.
  • Step #6 Break the egg into a measuring c, whisk slightly, then add enough light cream to make 1 c of liquid ingredients.
  • Step #7 Add the egg/milk mixture to the other ingredients & stir just until the dough comes together - it will be quite sticky.
  • Step #8 Divide the dough equally among the muffin cases, then decorate with chocolate chips, if using.
  • Step #9 Bake for 10 mins.
  • Step #10 Lower heat to 350ºF & bake an extra 5-10 mins or until golden brown & firm to touch.
  • Step #11 Remove from oven & cool slightly on a baking rack.
  • Step #12 Store leftovers in an airtight container.
