Delicious Tuna Noodle Casserole Recipe

Ingredients
  • 4 1/2 c flat egg noodles .
  • 1 1/2 tsps dry mustard .
  • 5 scallions, sliced .
  • 10 tsps butter .
  • salt .
  • fresh ground black pepper .
  • 1 1/2 c homemade fresh breadcrumbs .
  • 3 1/3 c milk .
  • 1 (12 oz) can tuna in vegetable oil, drained & broken into small chunks (packed in oil) .
  • 3 tbsps flour

Directions
  • Step #1 Preheat oven to 375 degrees.
  • Step #2 Rub inside of a 2 1/2 quart casserole dish with 1 tbsps butter.
  • Step #3 Bring large pot of salted water to boil over high heat.
  • Step #4 Add noodles & cook this until al dente, 5-7 mins.
  • Step #5 Drain & transfer noodles to a large bowl.
  • Step #6 Melt 4 tbsps butter in a medium saucepan over medium-high heat.
  • Step #7 Add half the scallions & cook this until softened, 1-2 mins.
  • Step #8 Add flour & mustard & cook, stirring frequently, for 1 mins.
  • Step #9 Gradually pour in milk, whisking constantly, & bring to a boil.
  • Step #10 Cook sauce, stirring frequently, until smooth & thickened, 16-18 mins.
  • Step #11 Spice up with salt & pepper to taste.
  • Step #12 Transfer sauce to bowl with noodles.
  • Step #13 Add tuna & stir carefully to mix.
  • Step #14 Transfer tuna-noodle mixture to prepared dish.
  • Step #15 Melt remaining butter & toss with remaining scallions, bread crumbs, & salt & pepper to taste in a bowl.
  • Step #16 Scatter seasoned bread crumbs over tuna-noodle mixture & bake this until golden brown & bubbling, 20-25 mins.
  • Step #17 Let casserole cool slightly before serving.
