Chicken Enchiladas Recipe

Ingredients
  • 2 tbsps cooking oil .
  • 2 c medium cheddar, grated .
  • sliced tomatoes, for color (optional) .
  • 1/4 tsp pepper .
  • Topping .
  • 1 tsp chili powder .
  • 10 oz mushrooms, sliced (fresh or canned, I use fresh) .
  • 1/2 tsp salt .
  • 4 oz green chilies, sliced (fresh or canned, I use fresh) .
  • grated cheddar cheese .
  • 1 c sour cream (I use fat free) .
  • 1 c sliced onions .
  • sliced onions (optional) .
  • sour cream .
  • 1 garlic clove, minced or 1/4 tsp garlic powder .
  • shredded lettuce, for color (optional) .
  • 1 tsp ground cumin .
  • 4 boneless chicken breasts, sliced .
  • 16 corn tortillas (depends on your preference) or 8 flour tortillas (depends on your preference)

Directions
  • Step #1 Heat cooking oil in pan.
  • Step #2 Add chicken onion & garlic.
  • Step #3 Heat until no pink remains in meat.
  • Step #4 Remove from heat.
  • Step #5 Stir next 7 ingreadients together well in bowl.
  • Step #6 Add chicken mixture.
  • Step #7 In casserole type pan, lay out tortillas & fill center with chicken mixture.
  • Step #8 Sprinkle top 2 tbps cheese on each tortilla.
  • Step #9 Roll tortilla lightly around filling & arrange in pan.
  • Step #10 Bake uncovored at 350F for 15 mins.
  • Step #11 Topping: Spread sour cream on top & sprinkle cheese.
  • Step #12 Return to over for 5 mins.
  • Step #13 Remove.
  • Step #14 If desired, top this with lettuce, onions & tomatoes.
