Spinach Stuffed Cucumber Cases Recipe

Ingredients
  • 3/4 tsp salt .
  • 1/2 c spinach, finely sliced (or use frozen, thawed & squeezed dry) .
  • 6 cucumbers (about 3 inches long each) .
  • 3 green onions, minced .
  • 1 egg yolk (hard boiled & mashed) .
  • pepper (freshly ground) .
  • 3 tbsps lemon juice .
  • 1/3 c mayonnaise (or less)

Directions
  • Step #1 Peel & cut cucumber into 3/4 to 1 inch thick pieces & scoop out the seeds from one end of each cucumber piece, leaving the other end closed to form a small case or c.
  • Step #2 Chill & dry the cucumber cases on paper towels, uncovered, in the refrigerator for at least one hr.
  • Step #3 Combine the remaining ingredients & fill the cucumber cases with the mixture.
  • Step #4 The cases can be filled an hr or two before serving.
