1/2 c spinach, finely sliced (or use frozen, thawed & squeezed dry) .
6 cucumbers (about 3 inches long each) .
3 green onions, minced .
1 egg yolk (hard boiled & mashed) .
pepper (freshly ground) .
3 tbsps lemon juice .
1/3 c mayonnaise (or less)
Directions
Step #1 Peel & cut cucumber into 3/4 to 1 inch thick pieces & scoop out the seeds from one end of each cucumber piece, leaving the other end closed to form a small case or c.
Step #2 Chill & dry the cucumber cases on paper towels, uncovered, in the refrigerator for at least one hr.
Step #3 Combine the remaining ingredients & fill the cucumber cases with the mixture.
Step #4 The cases can be filled an hr or two before serving.
