Southwestern Grilled Chicken With Yogurt Salsa Recipe

Ingredients
  • 2 (4 oz) cans sliced mild green chilies, drained .
  • 1 yellow bell pepper, cut into sixths .
  • 1 tsp ground cumin .
  • 1 red bell pepper, cut into sixths .
  • 1 lb boneless skinless chicken breasts .
  • 1 (8 oz) container low-fat plain yogurt .
  • 1 green bell pepper, cut into sixths .
  • 1/4 c minced green onions .
  • 1 tsp salt .
  • 1 tbsp low-fat mayonnaise

Directions
  • Step #1 Combine yogurt & green chilies, onions, cumin & salt in medium bowl.
  • Step #2 Set aside 2/3 c yogurt mixture for salsa; put in the fridge.
  • Step #3 Pierce chicken liberally on both sides with fork; add to bowl with yogurt mixture, turning once to coat both sides.
  • Step #4 Marinate 15 mins.
  • Step #5 Grill chicken & peppers over medium barbecue.
  • Step #6 Grill, until chicken is cooked through & peppers are crisp tender, turning once, about 10 mins.
  • Step #7 **To Broil: Place chicken & peppers on rack in broiler pan 4-5 inches from pre-heated broiler.
  • Step #8 Following above grilling directions.
  • Step #9 **.
  • Step #10 Meanwhile, prepare Yogurt Salsa by stirring mayonnaise into reserved 2/3 c yogurt mixture; place this in small serving bowl.
  • Step #11 To serve slice chicken (maybe spoon some salsa over top).
